Recommended Local Food and Drinks in Danba
1. Pork (猪肉类)
In Danba County, Tibetan people feed a type of purebred local pig on the mountainside area, which are smaller than that in Han Nationality areas, and its meat smells more fragrant, so called Fragrant Pig. Most of the local meat dishes is made of the pork of this pig, such as Fragrant Pig Leg, Fat Pork, Pickled Pork, Salt Vegetable Stir-fried Pickled Pork, etc.
Fragrant Pig Leg (香猪腿): the leg is taken from a fat pig. The locals chop down four legs and cut off the fat meat, and put them outdoors for natural freezing about three days, and then hang them a cross-bar in a airy house for drying. After a certain time, Fragrant Pig Leg is made. There are several way to eat Fragrant Pig Leg. Boiling, stewing and stir-frying are the universal methods. Some Tibetan would like to eat raw pork. When their relatives or friends come to their home, they sit around the Guozhuang and put a big dish in the center on which a Frangrant Pig Leg, and then cut it one by one to eat. It is one of local specialties in Danba.
Fat Pork (猪膘): the pork is the part from pig neck and rump, taken from a fat pig. It is also one of local specialties. The locals cut the part into two bulks of Fat Pork, and put them in boiling water for stewing. When they are about half-cooked, the locals fish out and use several sticks to prop straight, and put them outdoors for natural freezing to shape, and then hang them to dry out in a airy horse. This type of cooked pork can be reserved for a few years. When eating it, the fragrant remains.
Pickled Pork (腊肉): the pork is cut into long strip, then let it dry naturally in the wind or roast to dry, and the pickled pork is made. The naturally dried pickled pork has natural fresh scent, and the pork roasted with salt, Chinese prickly ash and Sichuan pepper are hot and spicy. In the local, Tibetan people would like to use the pickled pork to make Suancai Baozi and Suancai Miankuai.
Salt Vegetable Stir-fried Pickled Pork (酸菜炒腊肉): It is one of local specialties in Danba. The locals stir-fry the pickled pork together with pickled salt vegetable, and add Sichuan pepper and Chinese prickly ash. This is an appetizer.

2. Blood Sausage (血肠)
In Jiarong Tibetan Language, Blood Sausage means "Daxibubu (大西不布)". There are two types, one is Pig Blood Sausage and the other is Chinese Sauerkraut Sausage. Pig Blood Sausage: The locals dice the fresh meat, put diced meat together with corn flour, buckwheat flour, add fresh ginger, salt, onion, and then pour into it some water and pig blood and stir it to be pasty, and then infuse the pasty mixture into big pig sausage or small pig sausage. And then put the pig sausage into the boiling water for cooking thoroughly.
Chinese Sauerkraut Sausage: The locals cook the pickled pork with salt vegetable, and then infuse it into pig sausage. After cooking in boiling water, the Chinese Sauerkraut Sausage is made successfully.
3. Matsutake Stewed Chicken Nuggets (松茸炖鸡块)
Matsutake is one type of rare edible wild fungus, and honoured as the "King of Edible Fungus". The mountainous Matsutake have medicinal value. When Matsutake is cooked with the local chicken, the flavour of this dish is delicious and it has the function of enhancing human immunity. Visiting Danba, this dish should not miss.

4. Salt Vegetable in Baozi (酸菜包子)
This kind of Baozi is the traditional and daily food. Its core is the local home-made salt vegetable and pickled pork. The vegetable usually grow in a frigid zone. The taste is sour and spicy. The other daily food is Huoshaozi Momo, which is a kind roasted flour dough.Whenever you travel in Danba, you can eat them.
5. Baked Potato (烤土豆)
In Danba, the soil is only suitable to plant potato, corn and highland barley, but not other vegetable like Han nationality areas. The locals get a harvest of potato every year and they would like to put them on the fire until well-roasted.
6. Corn BaBa and Cornmeal (玉米粑粑、玉米糊)
The corn is also main crop in Danba. At the harvest time, visitors can not only see the golden corn cobs hang on the Diaolou, but also taste the featured Corn BaBa and Cornmeal which are made of corn flour. The locals make Corn Baba and then put it on the fire to roast, and turn over ever and again. When its two sides turn to yellow color, this Baba can be eaten.
7. Za Wine (砸酒)
In Danba, the locals not only drink highland barley wine, but also like to drink Za Wine which is one type of home-made berley wines. They cook thoroughly the barley grains in boiling water and then put them outside to be cool down, then add proportional distiller's yeast into it. After four days' fermentation, putting the mixture into wine jar, and one day later, it can be drunk. The taste of wine is sweet and full-bodied, a little bitter but refreshing.
Recommended Local Food in Jiaju Tibetan Village
Jiaju Tibetan Village is about 8.5km away from Danba County town. It is convenient to transit vegetable from the town to the village. Nowadays, in Jiaju Village, you can also eat the food that you can eat in the town. The food below is the local characteristic food offered in the guestroom or Tibetan home.
1. Roast Local Chook (烤土鸡)
The local Jiarong Tibetan are warm and hospitable. If there are guests came from far away, they will prepare the roast Local Chook. Most of guestroom in Jiaju Village can also offer the roast Local Chook to tourists. This kind of chicken is fed freely in nature. They just eat the grass and worm, and no fodder. So, the chicken is quite tender and tasty.
2. Corn Steamed Bread (玉米馒头)
Corn Steamed Bread is the main food of meals a day for the local Jiarong Tibetan. Moreover, they also use the corn flour to make Corn BaBa and Cornmeal. Maybe you will feel that the Corn Steamed Bread is so hard to bit off, because the locals have no soda ash which decomposite when heated to carbon dioxide, making steamed bread become soft.
3. Roast Whole Sheep (烤全羊)
Roast Whole Sheep is the most valuable food in Jiaju Village. Only when it is a big festival or guests require, the locals slaughter their own sheep, then put it on the fire and roast it about three or four hours. In the evening, they make a bonfire in the courtyard and dance Guozhuang around the bonfire, as eating the sheep.
